Raw Luck

I went to Ireland a few years ago over St. Patrick's day. In the small coastal town where we stayed, every pub was full of families while live classic Irish tunes blared into the streets. It was an energy I will never forget. The most memorable food was a killer muesli the B&B owners made every morning (more on that to come) and plenty of rounds of fish and chips. These days we're slightly less inclined to standard Irish fare, so we've reinvented St. Pat's with plenty of greens. Clear your counter and invite over a friend for an almost effortless kale, avocado, and almond salad that's tangy, crunchy, and has real pairing purpose. Kale boasts plenty of vitamin K and E to boost your immune system and promote healthy skin. Since these vitamins are fat soluble, the nutritious source of fat in almonds and avocado are kale's perfect partner to boost vitamin absorption. 

Add in a stout beer and a wholesome piece of bread, and we'll call it seriously lucky.

Raw Luck Salad -serves 2

1 large bunch kale, stems removed

1 lemon, juiced

1 teaspoon maple syrup or agave

2 teaspoons olive oil

1/4 teaspoon salt

1 avocado, chopped into chunks

1/3 cup sliced or slivered almonds

Tear kale off of stem, slice into small pieces, and place in a large bowl. Add remaining ingredients to the bowl and work mixture into kale with your hands until kale is wilted and creamy and all of avocado is incorporated. Top with extra almonds Leftovers will keep overnight for an easy lunch the next day.
